  • 4 large vine-ripened tomatoes, chopped
  • 1 small red onion, chopped
  • 1 garlic clove, crushed
  • 2tbsp olive oil
  • 1tbsp tomato purée
  • pinch of sugar


  1. Place all the ingredients in a pan with salt and pepper. When it starts to bubble, simmer for about 15 minutes until the tomatoes have cooked down. Taste for seasoning - serve warm or cold as a dip with burgers or sausages.
