These bite sized treats offer just enough sweetness to curb that sugar craving, while they’re only small so you won’t feel too guilty for treating yourself – plus they look gorgeous balanced on a saucer next to a cup of tea!

HOW TO MAKE ONE-BITE FAIRY CAKES

Ingredients

For the vanilla cakes:

  • 150g caster sugar
  • 85g butter, softened
  • 2 free-range eggs, beaten
  • 225g plain flour, sifted
  • 1tsp baking powder, sifted
  • 150ml milk
  • 1tsp vanilla extract

To make the chocolate cakes:

  • replace 1tbsp plain flour with 1tbsp sifted cocoa powder

For the frosting:

  • 200g cream cheese
  • 100g butter, softened
  • 100g icing sugar, sifted
  • 2tsp vanilla extract
  • 2tbsp cocoa powder sugar flowers and choc eggs, to decorate

You will need:

  • mini cupcake trays and cases; piping bag and star nozzle

Method

  1. Heat the oven to 180C, gas 4. Beat the sugar and butter with an electric whisk until pale and fluffy. Alternately add the eggs, flour and baking powder, beating well between each addition. Gently add the milk and vanilla. Divide between paper cases; bake for 15-20 minutes.
  2. For the frosting, whisk half the cream cheese with the butter and icing sugar, then whisk in the remaining cream cheese. Divide the frosting in half and add 2tsp vanilla extract to one half and 2tbsp cocoa powder to the other half.
  3. Pipe with a star nozzle and decorate with sugar flowers and chocolate eggs.
