  • 75g(3oz) walnuts, roughly chopped
  • 100g (4oz) feta, crumbled
  • 2 ripe pears, sliced into small wedges
  • 3 spring onions, finely sliced
  • 75g(3oz) peashoots
  • 4tbsp (60ml) olive oil
  • ½lime, juiced
  • 2tsp dijon mustard
  • 2tbsp honey


  • Place the walnuts, feta, pears, spring onion & pea shoots into a large bowl.

  • Mix the olive oil, lime juice, dijon mustard and honey together then lightly season with salt and pepper. Pour over the salad and toss gently to coat.

  • Divide between 6 plates and drizzle with any remaining dressing to serve.
