  • 4 salmon fillets
  • for the salsa
  • 300g (10oz) fresh mango, finely diced
  • 1-2 red chillies, deseeded and finely chopped
  • ½ red onion, diced
  • juice 1-2 limes (depending on how sweet the mango is)


  • Get the barbecue going so it’s fairly hot (or heat the grill to medium-high), season and lightly oil the salmon fillets, then grill for 5 minutes, turning once, for medium-rare salmon, or longer if you prefer.

  • Mix the salsa ingredients, and season. Serve the salmon with the salsa on the side.
