Ingredients

  • 700g (1lb 9oz) broccoli
  • 100g (4oz) blue cheese, thinly sliced
  • 2tbsp toasted pine nuts
  • for the dressing
  • 4tbsp olive oil
  • juice 1 lemon
  • 1 garlic clove, finely chopped
  • 1tsp cayenne pepper

Method

  • Trim the broccoli and break into florets. Cook in boiling, salted water for 6 to 7 minutes until tender. Meanwhile, to make the dressing. whisk all the ingredients together in a bowl and season. Drain the broccoli and plunge it into the dressing, turning to coat. Set aside until cold, turning occasionally.

  • When the broccoli is cold, divide it among four serving plates with the blue cheese and pine nuts. Drizzle over any dressing left in the bowl and serve straight away.
