Method
Mix together the mayonnaise with the lemon juice and mustard, and season to taste. Divide the mayonnaise between 4 little bowls, then pile the prawns into 4 glasses and serve immediately.

- 8tbsp good-quality mayonnaise
- 700g (1lb 9oz) cooked Atlantic prawns
- juice 2 lemons
- 1tbsp Dijon mustard

For a quick mayo cheat, stir through a very fresh egg yolk with the lemon and mustard - it makes the mayo taste like it has just been whipped up.
