Ingredients

  • 8tbsp good-quality mayonnaise
  • 700g (1lb 9oz) cooked Atlantic prawns
  • juice 2 lemons
  • 1tbsp Dijon mustard

Method

  • Mix together the mayonnaise with the lemon juice and mustard, and season to taste. Divide the mayonnaise between 4 little bowls, then pile the prawns into 4 glasses and serve immediately.

Top Tip

For a quick mayo cheat, stir through a very fresh egg yolk with the lemon and mustard - it makes the mayo taste like it has just been whipped up.
