For the chocolate layer:
- Melt the coconut oil over a low heat. Whisk the cocoa powder into the coconut oil a little at a time then whisk in the remaining ingredients until smooth.
- Line a small tray (around 17cm x 11cm) with parment paper. Use a spatula to smooth the mixture across the tray. Leave to set in the fridge for 10 minutes.
For the mint layer:
- Put all the ingredients in a bowl and whisk until smooth.
- Smooth the mixture over the chocolate layer and leave to set in the fridge for 10 minutes.
- Slice into squares and eat straight from the fridge.

Ingredients
For the chocolate layer:
- 100g coconut oil, such as Vita Coco coconut oil
- 50g cocoa powder
- 3 tbsp raw honey
- 1 tsp vanilla
- 1/2 tsp mint extract (or to taste)
- pinch of salt
For the mint layer:
- 150g coconut oil (at room temperature), such as Vita Coco coconut oil
- 3 tbsp raw honey
- 3/4 tsp mint extract (or to taste)
- 1.5 tsp spirulina powder
- 1 tsp turmeric
