Pasta (opens in new tab) salads are a great meal to make if you’re in a hurry or want to feed a big crowd because they’re quick and easy and really cost effective when it comes to the ingredients you use.
A lot of the ingredients in this pasta salad recipe (opens in new tab) are things you’ll already have in your cupboard, so whether you’re wanting to whip up a quick week night meal or suddenly find yourself feeding a crowd at late notice, it’s a great option to choose.
This great pasta salad recipe serves six and can be enjoyed as a main or side dish if you’re barbecuing or serving a buffet. It’s really easy to double the ingredients if you’re wanting to make an even bigger batch.
With sunblush tomatoes and mozzarella, this dish has a really Mediterranean feel and taste, especially with addition of basil and balsamic vinegar.
What’s more, with only the pasta that needs cooking it’s also a really easy dish to throw together in a hurry – so you’ll have the rest of the evening to yourself. Try it this week for a really quick supper meal.
HOW TO MAKE ITALIAN INSPIRATION PASTA SALAD
Method
Boil the pasta in a large pan of boiling salted water for 10 mins.
Meanwhile, put the tomato salsa into a large bowl. Add the olive oil, balsamic vinegar and sunblush tomatoes.
Drain the pasta, tip into the bowl with the other ingredients. Add the mozzarella and basil leaves and season generously. Serve warm or cold.

- 200g (7oz) tomato salsa
- 2tbsp olive oil
- 1tbsp balsamic vinegar
- 8 sunblush tomatoes, drained from oil
- 1 x 290g pack mini mozzarella balls, drained
