For the chocolate layer:
- Melt the coconut oil over a low heat. Whisk the cocoa powder into the coconut oil a little at a time then whisk in the remaining ingredients until smooth.
- Line a small tray (around 17cm x 11cm) with parment paper. Use a spatula to smooth the mixture across the tray. Leave to set in the fridge for 10 minutes.
For the mint layer:
- Put all the ingredients in a bowl and whisk until smooth.
- Smooth the mixture over the chocolate layer and leave to set in the fridge for 10 minutes.
- Slice into squares and eat straight from the fridge.
