For the chocolate layer:

  1. Melt the coconut oil over a low heat. Whisk the cocoa powder into the coconut oil a little at a time then whisk in the remaining ingredients until smooth.
  2. Line a small tray (around 17cm x 11cm) with parment paper. Use a spatula to smooth the mixture across the tray. Leave to set in the fridge for 10 minutes.

For the mint layer:

  1. Put all the ingredients in a bowl and whisk until smooth.
  2. Smooth the mixture over the chocolate layer and leave to set in the fridge for 10 minutes.
  3. Slice into squares and eat straight from the fridge.

  • 50g cocoa powder
  • 3 tbsp raw honey
  • 1 tsp vanilla
  • 1/2 tsp mint extract (or to taste)
  • pinch of salt

  • 150g coconut oil (at room temperature), such as Vita Coco coconut oil
  • 3 tbsp raw honey
  • 3/4 tsp mint extract (or to taste)
  • 1.5 tsp spirulina powder
  • 1 tsp turmeric
