  • 2 large onions, sliced
  • a pinch of ground cloves
  • ½tsp ground nutmeg
  • 1 chopped red cabbage
  • 3 sliced apples
  • 200g (7oz) brown sugar
  • 150ml (¼pt) cider vinegar 
  • 1 cinnamon stick
  • Oil


This cabbage recipe is the perfect accompaniment to your Christmas lunch - when you're serving up a turkey with all the trimmings, you can't miss out on the cabbage, as it's a staple part of a successful Christmas meal.

This recipe serves 8 which is fab if you're catering to a large group, which is often the case at Christmas. If you're cooking for an even bigger group, you can easily scale up all the ingredients and make a really big batch for everyone to be able to help themself.

You can make this recipe ahead and simply reheat it when the time comes to dish it up. This is a blessing, especially when you'll be swamped on Christmas day itself making a whole host of other recipes to go with your turkey.

How to make Festive Red Cabbage For Christmas Lunch:
  1. Fry the onions gently with the ground spices in a little oil until soft.

  2. In a large casserole dish, layer the red cabbage with the apples, the onion and brown sugar. Pour the cider vinegar over the top, and add the cinnamon stick.

  3. Cover and cook on a low heat or in a low oven (160C, 140C fan, gas 2) for 1½ hours. You may need to add a little water to keep it moist.
