Festive Red Cabbage For Christmas Lunch
It wouldn't be Christmas without red cabbage so try this very easy festive red cabbage recipe to go perfectly with your Christmas lunch
- 2 large onions, sliced
- a pinch of ground cloves
- ½tsp ground nutmeg
- 1 chopped red cabbage
- 3 sliced apples, sliced
- 200g (7oz) brown sugar
- 150ml (¼pt) cider vinegar
- 1 cinnamon stick
Fry the onions gently with the ground spices in a little oil until soft.
In a large casserole dish, layer the red cabbage with the apples, the onion and brown sugar. Pour the cider vinegar over the top, and add the cinnamon stick.
Cover and cook on a low heat or in a low oven (160C, 140C fan, gas 2) for 1½ hours. You may need to add a little water to keep it moist.
