Method
Preheat the oven to 350F
Heat the tomato sauce in a small saucepan. When warm, transfer it to a baking dish and stir in the fresh herbs. Create four indentations in the sauce, and carefully crack an egg into each one. Bake the mixture for 10 to 12 minutes, depending on how you like your egg yolks cooked. Remove the pan from the oven and sprinkle everything with a dash of sea salt
Divide the sunken eggs between two plates and serve with a side of sauteed spinach, if you like.

- 3 cups of organic tomato sauce (preferably homemade)
- 3tbsp chopped fresh herbs, such as basil, parsley, thyme, oregano and rosemary
- 4 free-range eggs
- Sea salt, to taste
- Spinach, sauteed (optional)
