Ingredients
- 500g (1lb 2oz) baby plum tomatoes
- 1 x 400g tin butter beans
- 1 red onion
- 2tbsp oregano
- salt
- black pepper
- 1tbsp sherry vinegar
- 3tbsp olive oil
Method
Place 500g (1lb 2oz) baby plum tomatoes (halved), 1 x 400g tin butter beans (rinsed and drained), 1 red onion (peeled, halved and thinly sliced) and 2tbsp oregano (leaves stripped from the stalk and roughly chopped) in a large bowl. Season with salt and black pepper, drizzle over 1tbsp sherry vinegar and 3tbsp olive oil, mix and serve.
Top Tip for making Tomato, Butter Bean and Red Onion Salad
The flavours in this salad really improve after a couple of hours. You could use other tinned beans – cannellini, flageolet or borlotti. Never keep tomatoes in the fridge as it kills their flavour.
