Once you’ve learned how to make your own ice cream you will be free to experiment with interesting flavour combinations and you’ll never want to go back to shop bought. It takes minimal effort – just a bit of time for freezing – and you’ve got a sweet and creamy home-made treat. This strawberry ice cream with balsamic can be enjoyed on its own, used in a summer sundae, or served alongside a simple cake to turn it into something a bit more special.
HOW TO MAKE STRAWBERRY ICE CREAM WITH BALSAMIC
- 450g (1lb) strawberries, hulled
- 150g (5oz) caster sugar
- 1tbsp rich balsamic vinegar (Belazu is good)
- 150ml (¼pt) double cream
Whizz the strawberries and sugar in a blender to form a purée, then stir in the balsamic vinegar and chill for 30 minutes.
Stir in the cream then churn in an ice cream maker until nearly frozen, before freezing overnight. Remove from the freezer 10 minutes before serving.
