Strawberry ice cream is given a sharp and refreshing and twist with this delicious recipe. Balsamic vinegar may seem like an unusual ice cream ingredient, but the flavours work perfectly to make a dessert that is a bit different and tastes great. It is so easy to make and only uses a few ingredients. Surprise your guests with this sharp and sophisticated summer ice cream recipe.

It takes minimal effort - just a bit of time for freezing - and you've got a sweet and creamy home-made treat. This strawberry ice cream with balsamic can be enjoyed on its own, used in a summer sundae, or served alongside a simple cake to turn it into something a bit more special.
HOW TO MAKE STRAWBERRY ICE CREAM WITH BALSAMIC
Method
- Whizz the strawberries and sugar in a blender to form a purée, then stir in the balsamic vinegar and chill for 30 minutes.
- Stir in the cream then churn in an ice cream maker until nearly frozen, before freezing overnight. Remove from the freezer 10 minutes before serving.

- 450g (1lb) strawberries, hulled
- 150g (5oz) caster sugar
- 1tbsp rich balsamic vinegar (Belazu is good)
- 150ml (¼pt) double cream
