  • 50g yeast
  • 700ml lukewarm water
  • 1tsp salt
  • 1tbsp honey
  • 100g oats
  • 500g wholemeal flour
  • 200g plain flour
  • 100g blueberries
  • 100g coarsely chopped walnuts
  • 100g coarsely chopped hazelnuts


  • In a large mixing bowl, dissolve the yeast in the water, then add salt and honey together

  • In another bowl, mix the oats and the flours, stir into the yeast mixture together with the blueberries, walnuts and hazelnuts. Mix well with a wooden spoon. Knead the dough gently for a couple of minutes

  • Cover with a tea towel and leave to rise for 1 hour

  • Form around 20 buns, place them on baking trays lined with baking paper, cover with towels and let rise again for 30 minutes in a warm place

  • Meanwhile, preheat the oven to 200C/gas mark 6. Glaze the loaves with water and bake in the preheated oven for 25-30 minutes

  • Leave to cool on a wire rack
