Usually you might use pancetta with your sprouts, to add a little saltiness, but in this case, this recipe uses the radishes to give a bit of pepperiness instead. You might not have thought to try this before, but it’s great for added texture and colour too. You can find radishes in the salad section of most supermarkets and hopefully you can get a variety of colours too.

HOW TO MAKE ROASTED SPROUTS
- 1kg Brussels sprouts, trimmed
- 2tbsp olive oil
- 300g French breakfast radishes, trimmed
- 2tbsp snipped chives
- 25g butter, softened
Heat the oven to 180C fan, gas 6. Mix the sprouts with the oil and plenty of seasoning. Put into a roasting tin, roast for 15 minutes, then add the radishes roast for a further 5 minutes. Add the chives and butter, stir to combine and serve.
