- 2kg (4½lb) King Edward potatoes, peeled and roughly chopped
- 200ml (7fl oz) extra virgin olive oil
- 200g (7oz) Parmesan, grated
Place the potatoes in a pan of lightly salted water and bring to the boil. Reduce heat and simmer for 15 minutes. Drain and mash.
Add the olive oil and Parmesan cheese and season to taste.
