Using fennel seeds, that are great for aiding indigestion and Cajun spice rub along with brown sugar, these chicken drumsticks are spicy and flavoursome when left to marinade overnight. But don’t worry if you’re pushed for time as just marinating them for an hour will also ensure this barbecue recipe is full of flavour too.
Chicken is a great source of protein and is full of essential minerals and can be enjoyed as part of a healthy and low calorie diet. HOW TO MAKE CAJUN CHICKEN DRUMSTICKS
Method
- Place all the marinade ingredients in a bowl and coat the drumsticks well. Marinate for at least an hour, or up to overnight.
- When you’re ready to cook, remove the drumsticks from the marinade and shake off any excess. Cook on the hottest part of the barbecue for 20 to 25 minutes, turning occasionally. Serve the drumsticks with lots of napkins!

- 3tbsp olive oil
- 8 free-range chicken drumsticks, skin on
