Who doesn’t love ice cream? Just ice cream with added waffle biscuit makes even more of a treat. Whether you’re in need of a summery dessert or just want to pretend it’s sunny outside, this dessert is really easy to change up depending on what ice cream or topping you prefer – so even the fussiest of eaters in the family will find a flavour that’s great for them.
All you need are caramel waffle biscuits, an ice cream flavour of your choice and your favourite chopped nuts for the topping. This dessert recipe serves one, but it’s really simple to up the quantities for the amount of people you’ve got eating.
So why not try this extra special dessert this week? It only takes fifteen minutes to whip up and will feel like a real treat.
HOW TO MAKE ICE CREAM WAFFLE SANDWICHES
Let the ice cream soften a little, then put a scoop in the centre of one waffle biscuit. Squash the other biscuit on top to make a sandwich, then tidy the edges with a palette knife.
Roll in chopped nuts then return to the freezer in a lidded box for around 20 minutes.
You can try any flavour combination you like, but we made chocolate ice cream with pistachio nuts, coffee ice cream with hazelnuts and vanilla ice crea, with salted peanuts.
- 2 caramel waffle biscuits per waffle sandwich, such as Biona
- 1 scoop ice cream per waffle sandwich, such as chocolate, coffee or vanilla flavour
- handful nuts, chopped, for the edges
Top Tip for making Ice Cream Waffle Sandwiches
If you leave them for too long, the biscuits will become too hard, so don't make them too far in advance
