  • 250g (8oz) cherry tomatoes
  • 1 garlic clove, sliced
  • ¼tsp freshly ground black pepper
  • 4x15cm (6inch) wholemeal pitta breads
  • 1tbsp olive oil, plus more for drizzling
  • 65g (2½oz) feta cheese, crumbled
  • 4tbsp halved, pitted kalamata olives
  • 4tbsp roasted peppers, sliced
  • 40g (1½oz) baby rocket
  • You will need:
  • A large rimmed baking sheet


  • Preheat oven to 230C, 450F, gas mark 8

  • Crush tomatoes with garlic and pepper in a small bowl

  • Arrange 4 pitta breads on a large rimmed baking sheet; brush both sides of the pitta with oil. Top pittas with equal amounts of the tomato mixture, feta, olives and peppers

  • Bake for 7-8 minutes until edges are golden

  • Remove pittas from oven; top each with ¼ of the rocket

  • Drizzle with additional oil (optional) then serve
