- 1kg new potatoes, unpeeled and cut into small chunks
- oil, for shallow frying
- 3 red onions, peeled and sliced
- 8 garlic cloves, sliced
- 2 large red chillies, sliced
- 5tbsp fresh coriander, chopped
Steam the potatoes until just cooked. Heat a few tablesoons of oil in a large frying pan and fry the onions, then the garlic, then the chillies, in batches, removing them with a slotted spoon on to kitchen paper. Add further oil – you want it to be about an inch deep, then fry the potatoes in batches until browned all over and crisp.
To serve, gently mix the potatoes with the onions, garlic and chillies, and season with sea salt and pepper, then stir in the coriander.
