Ingredients

  • 2kg (4½lb) King Edward potatoes, peeled and roughly chopped
  • 200ml (7fl oz) extra virgin olive oil
  • 200g (7oz) Parmesan, grated

Method

  • Place the potatoes in a pan of lightly salted water and bring to the boil. Reduce heat and simmer for 15 minutes. Drain and mash.

  • Add the olive oil and Parmesan  cheese and season to taste.
