Ingredients

  • 1 x 280g jar sliced artichoke hearts in oil, drained
  • 1 lemon, zested and juiced
  • small handful parsley, finely chopped
  • small handful basil, finely chopped

Method

  • Set the drained artichoke slices on kitchen paper to soak up any excess oil. Fry or griddle the artichokes until browned or for about 1 minute on each side.

  • Rremove to a bowl and toss in the lemon zest, juice, chopped herbs and lots of seasoning.
