Dinner party nibbles couldn’t come any tastier than these delicious cheese gougères. They are the perfect dinner party recipe for savoury bites that are great when served up with welcome drinks as your guests arrive – and they couldn’t be easier to make either.
We’ve used Gruyère cheese, but this recipe works just as well with extra mature Cheddar if you’d prefer it. You’ll probably have most of the ingredients for this starter recipe in your pantry anyway, so it’s a great cost effective way of starting the night off and will make your party seem really special.
This recipe takes about an hour and makes 30 nibbles – so even if you’ve got a crowd coming there is enough to go round.
- 60g butter
- 125g plain flour, sifted
- 3 eggs
- 200g Gruyère or extra mature Cheddar, finely grated
- 1 egg yolk, to glaze
- You will need:
- 2 baking trays lined with baking parchment
- piping bag
For the pastry, put the butter, a pinch of salt and 200ml water in a pan. Bring to the boil, take off the heat and add the flour. Stir over a gentle heat until the mixture dries out and begins to leave the sides of the pan.
Take off the heat and add the eggs, one at a time, using an electric whisk. Now beat in 150g of the cheese. Heat the oven to 200C, gas 6.
Pipe the mix into 5-7cm rounds onto the parchment. Brush with egg yolk and scatter over the remaining cheese. Bake for 10 minutes, reduce the heat to 180C, gas 4 and bake for a further 30 minutes. Serve immediately.
Make these in the morning and leave to cool, then when you're ready to serve, reheat in a hot oven for 10 minutes.
