Freekeh salad is a healthy and filling vegetarian salad. Packed with nutritious ingredients and dressed with a punchy mustard vinaigrette, this recipe is so tasty as well as being a satisfying but light meal or side. This salad couldn't be easier to make and is a more unusual and interesting side salad to serve at summer gatherings.

Freekeh is a grain made from green durum wheat that has been roasted, giving it a deep and unique flavour. This ancient grain is popular in Levantine and North African cuisine and has been used for centuries - despite only just getting the attention it deserves in the UK. Freekeh is an amazing source of fibre and is full of nutrients such as selenium, potassium, and magnesium.

Our freekeh salad is also full of green vegetables, which provide a whole host of nutritional benefits. They are a great source of iron, calcium, magnesium, manganese, and potassium - to name a few.

As well as being good for you, this freekeh salad tastes great. We've used a punchy mustard vinaigrette to tie all the ingredients together, and used chopped pistachio nuts to add a satisfying crunch.

HOW TO MAKE FREEKEH SALAD

  • 200g (dry weight) freekeh, cooked
  • 150g runner beans, blanched
  • 150g green beans, blanched
  • 200g broad beans, blanched
  • 200g peas, blanched
  • 200g tenderstem broccoli, blanched
  • 75g chopped pistachio nuts
  • 5tbsp mustard vinaigrette
