Miso is a Japanese paste made from fermented soy beans, which may not sound hugely appetising, but once you've tried it you'll see how good it is. This salty and tangy paste is most commonly used in Japanese miso soup, but can be used to add a great burst of flavour to sauces, salad dressings and marinades. We've used miso to make a delicious butter that works beautifully with roast cod, but can also be served with vegetables, meats, or tofu.

White fish, like cod, is a really low fat source of protein to include in your diet. Our recipe for roast cod with miso butter is the perfect way to make this healthy white fish into an irresistible, crowd pleasing dish.

HOW TO MAKE ROAST COD WITH MISO BUTTER
  1. To make the butter, simply mix all the ingredients together. While you are cooking your vegetables to your liking, preheat the grill.
  2. Spread a thick layer of the butter over the fish fillets and grill until just cooked - around 5-10 mins, depending on the thickness of your fish.
  3. Toss the vegetables in the remaining butter and serve.
