This fennel, feta and orange salad is a lovely dish with the sweetness and acidity of the oranges, combined with the salty feta and aromatic fennel. The best thing about this salad is that it can be made ahead, as it won't wilt. Just make sure to add the dill right before serving. Keep it in the fridge and make sure it's nice and chilled before you dish it up. You can either serve it up as a starter, or as an accompaniment to your main. It goes really well with meat, especially something like duck, as the sharpness of the oranges cuts through the rich meat.

HOW TO MAKE FENNEL, FETA AND ORANGE SALAD

Method

  1. Segment the oranges, reserving the juice. Mix the juice with the olive oil and seasoning. Put the fennel into a bowl and mix in the oranges and dressing. Crumble over the feta and scatter over the dill. If you’re making it ahead, add the dill just before serving.
