Part way between a drink and a dessert this delicious after dinner treat is sure to go down well with friends and family, because who doesn't love sparkling wine and strawberries? We can't think of anyone.

The great thing about this low fat dessert recipe is that it's so simple to make that you can throw everything together at the last minute to impress guests and little will they know how very simple it really was. If you prefer you could use any other soft fruit or berries. The trick is picking something that will absorb all the beautiful fruity flavours in the wine - raspberries and blackberries would be equally as delicious.

Adding a few buttery biscuits to the side of this simple but elegant pudding adds texture and a softness to compliment the acidity in the fruit and alcohol. If you're looking to make it even more indulgent you could top it all off with a scoop of your favourite ice cream or sorbet, or even just a good dollop of freshly whipped dream - delicious!

We've served ours up in delicate little glasses but it's really up to you how you present this easy dessert recipe. It would look just as pretty in nice dessert bowls for your next dinner party or even high ball glasses so you could see the layers of fruit as you eat.

HOW TO MAKE STRAWBERRY FIZZ

Ingredients

  • handful strawberries, hulled
  • sprinkle caster sugar
  • good splash sparkling Ros

Method

  1. Wash then hull a few strawberries, put them in a bowl and scatter over a little caster sugar.
  2. When you're ready to serve, pour over some sparkling Rosé wine and serve with biscuits to dip.
