Limoncello and Prosecco jelly makes a light dessert with a bit of glamour and sparkle with its touch of edible glitter
- 5 leaves gelatine
- 350ml Prosecco
- 1tbsp caster sugar
- 6tbsp limoncello
- edible gold glitter, for sprinkling
Use this recipe as a base, but instead of limoncello, try it with Grand Marnier, Cointreau or raspberry liqueur
Serve this recipe up in individual glasses for a really posh looking treat after your main meal – but you’re guests never have to know how easy it actually is to whip up. Making this special boozy dish takes just 15 minutes, plus a little time to set, so it’s a great recipe to try if you want a special dessert for your next dinner party but don’t have hours to slave over something fancy.
What’s more, this recipe can be prepped ahead – so it’s a great one to have ready in the fridge waiting to go when you get round to having dessert.
- Place the gelatine leaves in a bowl of cold water for 5 minutes or until soft. Squeeze the leaves and discard the water.
- Put the limoncello into a bowl that fits snugly over a pan of boiling water, add the gelatine and sugar and heat gently until dissolved. Remove from the heat, add the Prosecco and pour into a jug.
- Very carefully and slowly, pour over the jelly into the glasses until each glass is almost full. Refrigerate until set. Top with gold glitter to serve.
