Berry yogurt parfait is a deliciously light dessert, and a wonderfully healthy choice - use seasonal berries like strawberries or raspberries!
500 g (1 lb 2 oz) fresh berries or 275 g (10 oz) frozen berries
½ teaspoon ground cloves
½ teaspoon ground cinnamon
500 g (1 lb 2 oz) plain yogurt, preferably low-fat
1 teaspoon vanilla extract
2 tablespoons maple syrup or organic honey
Because these lovely little pots are made without any refined sugar and use vitamin-rich berries they can also be served as a breakfast. They will look really pretty served up in glasses to impress guests!
In a small saucepan, warm the berries, adding a little water as needed to prevent burning. Simmer for 1 to 2 minutes.
Add the cloves and cinnamon and continue to simmer until the berries begin to soften, cool slightly. If the berries produce too much liquid, spoon them into the bowl with a slotted spoon.
Add the yoghurt and vanilla and mix well. Sweeten to taste with maple syrup. Serve with granola or porridge for breakfast or enjoy as a light dessert or snack.
