Method
In a large mixing bowl, dissolve the yeast in the water, then add salt and honey together
In another bowl, mix the oats and the flours, stir into the yeast mixture together with the blueberries, walnuts and hazelnuts. Mix well with a wooden spoon. Knead the dough gently for a couple of minutes
Cover with a tea towel and leave to rise for 1 hour
Form around 20 buns, place them on baking trays lined with baking paper, cover with towels and let rise again for 30 minutes in a warm place
Meanwhile, preheat the oven to 200C/gas mark 6. Glaze the loaves with water and bake in the preheated oven for 25-30 minutes
Leave to cool on a wire rack

- 1tbsp honey
- 100g oats
- 500g wholemeal flour
- 200g plain flour
- 100g blueberries
- 100g coarsely chopped walnuts
- 100g coarsely chopped hazelnuts
