Indonesian chicken pasta salad recipe

Bought satay sauce makes a deliciously nutty dressing to this simple pasta salad.

Ingredients

  • 200g (7oz) spaghetti
  • 4tbsp satay peanut sauce
  • 4tbsp French dressing
  • 150g (5oz) carrots, coarsely grated
  • 4 spring onions, thinly sliced
  • 2tbsp chopped fresh coriander
  • 200g pack cooked chicken tikka

Preparation

  1. Cook the spaghetti in boiling salted water for 10 mins until just tender. Drain and tip into a bowl.

  2. Mix together the satay sauce and French dressing. Pour over the spaghetti and stir well to evenly coat in the dressing. Add the carrot, spring onions and coriander and toss to mix. Serve warm or cold with the chicken tikka.
