Liven up your Christmas party with some fabulous cocktail recipes
Ingredients
- 150ml (¼pt) Hendrick's Gin
- 2 sliced limes, the juice of another
- 4 sprigs mint
- 3-4tbsp soft brown sugar
- ½ cucumber sliced lengthways
- handfuls crushed ice
- soda water
- 2.5cm (1in) of pomegranate juice
- 1cm (½in) crème de framboise
- 1tsp fresh pomegranate seeds
- Prosecco
- brown sugar cube
- 2 drops of Angostura bitters
- 1cm (½in) of Amaretto
- Prosecco
Preparation
Hendrick's mojito
An English version of the Cuban classic. In a jug, add 150ml (¼pt) Hendrick's Gin to 2 sliced limes, the juice of another third, 4 sprigs mint and 3-4tbsp soft brown sugar, and stir. Add ½ cucumber sliced lengthways, and 2 handfuls crushed ice then top up with soda water. Stir, check the sweetness and serve in highball glasses with swizzle sticks made from long slices of cucumber.
Pomegranate bellini
Pour 2.5cm (1in) of pomegranate juice (we love Pom) into a Champagne flute and top with 1cm (½in) crème de framboise and 1tsp fresh pomegranate seeds. Top with Prosecco and serve.
Italian Champagne Cocktail
A sweeter version of the classic Champagne cocktail. Place a brown sugar cube in a flute and sprinkle 2 drops of Angostura bitters on to it. Leave for 2 minutes, then add 1cm (½in) of Amaretto and top with Prosecco. Serve immediately, before the sugar cube melts.
