Orzo and lentil salad

300g (10oz) orzo pasta
500g (1lb 2oz) ready-cooked Puy lentils
4tbsp olive oil
2tbsp red wine vinegar
small bunch parsley, finely chopped

Cook the pasta according to the pack instructions, drain, mix with the other ingredients then serve. Or to serve at room temperature, cook the pasta for 2 minutes less than stated, drain, coat with a little olive oil and leave to cool before mixing with the remaining ingredients.
