500g (1lb 2oz) minced beef
2tbsp parsley, finely chopped, plus extra to garnish
2tbsp vegetable oil
500ml jar tomato pasta sauce
4 roasted red peppers, chopped
grated zest 1 orange
1 Mix the minced beef, 2tbsp parsle, salt and black pepper together. Shape into walnut-sized balls and chill, if possible.
2 Heat th oil in a frying pan and fry the meatballs, turning occasinally until browned, then pour over the tomato sauce, chopped peppers and orange rind. Simmer gently without stirring for 15 minutes, then serve garnished with parsley.

Try it! If you want to make your own tomato sauce for the meatballs, fry 1 finely chopped onion in 1tbsp olive oil until softened. Add a 400g can of tomatoes, 1tbsp tomato purée and the juice of 1/2 lemon. Simmer until thick and season to taste.
