Sweet Potatoes and Carrots with Thyme

Heat the oven to 190 C, 170 C fan, 375 F, gas 5. Peel and chop sweet potatoes and carrots into batons. Toss in a little oil, season and roast for 30 to 40 minutes, adding some thyme sprigs and a drizzle of maple syrup 15 minutes before 
the end of cooking.
