Salmon teriyaki with soba noodles recipe

A delicious salmon noodle recipe that's so easy to make

Ingredients

  • 2tbsp soy sauce
  • 2tbsp mirin (or Chinese rice wine)
  • 2 x 175g (6oz) salmon fillets
  • 100g (4oz) soba noodles
  • 75g (3oz) frozen soya beans, thawed
  • 100g (4oz) tenderstem broccoli
  • 1 ripe avocado, peeled and sliced
for the dressing
  • 2tsp sesame oil
  • 2tbsp soy sauce
  • juice 1 lime

Tip

Even marinating the salmon for an hour makes a big difference – save time by preparing in the morning or the day before

Preparation

  1. Mix together the soy sauce and mirin. Pour over the salmon, cover and marinate in the fridge for at least an hour or overnight.

  2. Heat the grill to its highest setting. Place the salmon on a foil-lined baking tray and grill for 5 to 6 minutes until just cooked through. Meanwhile, mix together the dressing ingredients, and cook the noodles, soya beans and broccoli in boiling water.

  3. Drain, pour over the dressing and serve with the salmon, and the avocado on the side.
