Balsamic vinegar may seem like an unusual ice cream ingredient, but the flavours work perfectly to make a dessert that is a bit different and tastes great.
- 450g (1lb) strawberries, hulled
- 150g (5oz) caster sugar
- 1tbsp rich balsamic vinegar (Belazu is good)
- 150ml (¼pt) double cream

HOW TO MAKE STRAWBERRY ICE CREAM WITH BALSAMIC
- Whizz the strawberries and sugar in a blender to form a purée, then stir in the balsamic vinegar and chill for 30 minutes.
- Stir in the cream then churn in an ice cream maker until nearly frozen, before freezing overnight. Remove from the freezer 10 minutes before serving.
