Try a new fruit salad recipe - so quick, easy and tasty
Ingredients
- 200g (7oz) caster sugar
- 2 stalks lemongrass
- 4 lime leaves, chopped
- 2 to 3 small melons, such as galia or cantaloupe, halved and seeds removed
Preparation
Place the sugar, lemongrass and lime leaves into a saucepan with 200ml (7fl oz) water. Heat gently until the sugar dissolves and then simmer very gently for 5 to 8 minutes, until you have a light syrup. Remove from the heat, transfer to a container and allow to cool completely.
- When ready to serve, scoop out bite-sized pieces of melon using a dessert spoon and combine in a large bowl. It’s much quicker than peeling and chopping – as long as the melon is perfectly ripe! Pour over the syrup, stir gently to coat the melon and leave for about 20 minutes to let the flavours infuse. Serve with our coconut macaroons.
