Method
First, preheat your oven to its highest setting and put a baking sheet on the middle shelf to heat up. Have everything sliced and prepped ready, then once the oven is hot enough, put the wraps on the baking sheet, add the tomatoes, drizzle with a little oil, season well, add the mozzarella and return to the oven for around 5 minutes or until the edges are lightly browned and the mozzarella is melting. Remove from the oven, add the Parma ham and rocket and serve.

- 3 ripe tomatoes, sliced
- little extra virgin olive oil
- 125g (4½oz) mozzarella, sliced
- 4 to 6 slices Parma ham
- handful fresh rocket
