In this superfood salad, a perfectly healthy lunch recipe, we’ve given smoked mackerel a tasty new twist.
Packed with loads of ingredients that are good for you, this salad is super quick to make.
Smoked mackerel is a great source of omega-3 fatty acids, which are great for your heart and your brain, while avocados are also a great source of healthy fats that will leave your skin and hair looking extra healthy.
Pink grapefruit adds an element of citrus to this dish, but is also great as it contains a dose of Vitamin C to help you fight against those bugs.
Brown rice is a great source of carbohydrates that will fill you up and keep you going all afternoon, so this salad really is an all rounder – no wonder we’ve called it superfood!
This dish takes no time at all to whip together and it served two, so you can either share it with your other half or make a bit batch and keep some for your lunch the next day too. Simple!
HOW TO MAKE SMOKED MACKEREL SUPERFOOD SALAD
Method
- Cook the rice. Drain, rinse and allow to cool. Stir in the rice vinegar and season well.
- Peel the avocado and cut into chunks. Squeeze over the lime juice.
- Add the grapefruit segments, avocado and parsley to the rice mixture and mix well.
- Divide the salad between two plates and top with the pieces of smoked mackerel.

- 100g (4oz) brown rice
- 2tbsp rice vinegar
- 1 ripe avocado
- juice half lime
- 1 pink grapefruit, segmented
- 1tbsp flat-leaf parsley, roughly chopped
- 2 small fillets smoked mackerel, skinned and broken into large pieces
