Revitalising and immune-boosting, this tasty vegetable soup is nutritious and great as part of a detox plan
Serves 4
100g/4oz brown rice or 50g/2oz pearl barley (optional)
1 litre/1¾pt vegetable stock
6 shiitake mushrooms, chopped
1 spring onion, white part sliced
1cm/½in piece root ginger, finely chopped
½ red chilli, deseeded and finely chopped,
or ¼tsp dried red chilli
2 sprigs thyme, leaves chopped
2 carrots, finely diced
squeeze lime or lemon juice
If using rice or barley, place in a saucepan and add the stock.
Bring to a boil and simmer for 20 minutes.
Add the remaining ingredients then simmer for 10 minutes.
If not using them, place all ingredients in a saucepan, bring to the boil and simmer for 10 minutes. Season and serve with the lime or lemon juice.
