Dukkah—a spiced nutty mix—is a party recipe that is easy to make and works perfectly with toasted pitta and a bowl of good olive oil. Simply dip the pitta into the oil and then into the dukkah. The texture should be coarse – not a fine powder.

Cooking time: 10 minutes
Serves 8 to 10

85g (3½oz) sesame seeds
50g (2oz) coriander seeds
50g (2oz) skinned hazelnuts

Toast sesame seeds in a hot, dry frying pan until golden brown and starting to pop. Grind briefly in a coffee grinder or crush with a pestle and mortar. Dry-fry coriander seeds until fragrant, then grind coarsely. Preheat oven to 180 C, 160 C fan oven, 350 F, gas 4, then roast hazelnuts until brown and grind coarsely. Mix the nuts and seeds and season.
