Preparation

This tasty chicken and shiitake mushroom noodle soup gets its flavours from East Asia, where the shiitake mushroom has been long praised for its health properties and itís commonly used in stir fries and other Asian cuisine. Ginger, tamari, spring onions and lemon grass give a bit of pep to this chicken soup, with the shiitake mushroom providing earthy, smoky flavour. For a lighter version of this soup, you can just leave out the noodles and have it for supper.
The soup is brimming with tasty vegetables and spices, so itís easy to replace the chicken with the ingredient of your choice. If youíre looking for a vegetarian option, this soup is delicious with chunks of tofu (added at the end of cooking the broth). For seafood variations, try prawns or chunks of white fish.
