Falafel, salsa and pitta bread recipe

SERVES 2

For the salsa
250g (9oz) vine tomatoes, chopped
½ small red chilli, deseeded and
finely chopped
2 spring onions, finely sliced
150g (5oz) ready-made falafel
2 wholemeal pitta bread
1 x 125g pot ready-made tzatziki
celery, cleaned and cut into sticks

Bake the falafel according to the packet instructions. To make the salsa, put the tomatoes, chilli and spring onions into a bowl and toss together. Set aside until needed. Put the pitta breads into the oven for 5 minutes while the falafel finishes cooking. Serve warm with the salsa, tzatziki and celery sticks.
