Easy Mexican Chicken Mole

This easy recipe makes a tasty Mexican chicken mole, part of Woman and home's wine and chocolate diet

Serves: 2

1tsp vegetable oil
1 small green pepper, halved, deseeded and cut into chunks
1 small onion, peeled and chopped
1 garlic clove, peeled and crushed
1 small green chilli, deseeded and finely chopped
½tsp medium chilli powder
½tsp ground cumin
1tsp cocoa powder
1 x 200g tin chopped tomatoes
4 chicken thighs, skinless
25g (1oz) dark chocolate, chopped
1dsp coriander, roughly chopped

1 Heat the oil in a medium-sized saucepan and when hot add the green pepper, onion, garlic and chilli. Sweat until soft, but not coloured.

2 Add the chilli powder, cumin, cocoa powder and tomatoes. Boil and season well. Place the chicken in the sauce, reduce the heat, add the chocolate and simmer for 20 to 25 minutes until the chicken is cooked. Scatter over the coriander and serve.
