What I do is I shove the following in a blender: 1 drained tin chick peas 1 clove garlic juice of half a lemon olive oil few drops of tabasco sauce
Normally I will blend this, and taste, adding more oil, lemon juice, or even some water till I get the taste and texture I want.
For a more complex version, grill a red pepper till the skin goes black. Put in a plastic bag for a minute or two and then peel off the skin. Shove the peeled peppers in the blender with the above ingredients plus a good handful of fresh coriander. It's a delicious variation.
