I judy. Rice salad is so easy and can be prepared for the most part the day before! Boil your rice however you normally do it (I do mine in the microwave!) Once is cooked drain and rinse in cold water thoroughly and out in fridge straight away. The next bit can be done now or the next day. Chop peppers (red and green) and onion and mix in with the rice. I also put some sweetcorn in and on the same day som really crispy apple.

Cous cous is also very easy to do and can be mixed with e same things or instead put some very lightly cooked frozen peas (only lightly cooked so they are still slightly firm to the bite) Chop cherry tomatoes into quarters and throw in and cucumber or whatever you fancy!

Slice cucumber and tomato together and serve as it is or roughly chop a block of feta cheese and mix with a bowl of olives

Another easy one is a dip of Tub of cream cheese (the one with garlic and herbs) mixed with a tub of Creme fraiche-easy and really lovely!! Serve with crudites.

I never do potato salad but just do boiled new potatoes - these could also be cooked and just reheated and a blob of butter and touch of parsley or mint when you are ready to eat.

As you can see I am the mistress of doing as little as possible on the day and making life really easy so I can enjoy my guests company instead of rushing round all sweaty and horrible!!
