The Rev's Scrummy Date and Oat Cake Slices

I have a friend who is a Methodist Minister and, a couple of days ago he gave me a recipe for some date and oat slices which I really felt I had to share with you - they are sooo scrummy! Here goes:

1 beaker of oats
1 beaker of S.R. flour
3/4 beaker of brown sugar
4oz soft margarine
1/2 teaspoon of bi-carbonate of soda
375gr (2 oval boxes) of dates (de-stoned and chopped)

(I used a tall mug for the beaker and a small mug for the water!)

Method

1. Put the dates and cup of water in a saucepan and heat on low. (Just to really moisten the dates without drowning them!).

2. Meanwhile put all the other ingredients into a bowl and fork in the margarine.

3. Put a good half of the oat mixture into a 7" x 11" greased tin. Spread on the dates. Cover with the rest of the oat mixture.Press down gently.

4. Put into a medium oven (I put the oven onto 160) and cook for about 25 minutes.

5. Remove from the oven and after 10 minutes cut into slices.

When they were cold, I put mine into the fridge and they tasted really great chilled. Normally recipes always seem to go wrong for me the first time I try them,but this was an absolute success and the whole lot were wolfed in a couple of days!
