Hiya. I too spend lots of time on my Narrowboat, so I know what you have to deal with!. I've used loads of adaptations of the Weightwatchers Healthy One Pots. It's a little booklet with 40 low fat recipes - easy 30min suppers, flavour packed soups, new ideas for chicken and tasty vegetarian ideas (not my words!) Published by BBC magazines. came with the BBC Good Food guide. I have used at least half of them on the boat - really easy in one shallow pan too, all done on the hob. If you have loads of trouble, I can scan and email you the recipes.
