Grating Onions??
      #421349 - 13/07/2009 13:24

Does anyone know how to grate onions? I have a recipe for zucchini relish which is great and I have no problem grating the zucchini but the onions turn to mush in the food processor. Ended up cutting them with tears streaming down my face last night.

Did you try grating the onions in the processor?
I chop onions in the processor using the pulse button so only make them as fine as I want, you have scrape them down a couple of times but can get them quite fine, probably as fine as grating. Let me know how you get on.

how about using a mandolin if oyu have one? or if all else fails your ordinary grater...

I had a chopper from M&S, plastic bowl with stainless steel blade, its small and will only do a little....... it was £9.50 from memory.

I've got one of those zylis chopper things where you bang down on the handle ( great stress reliever). It only does a small amount at a time but is very quick.

I always ending up chopping mine, have had various gadgets but takes longer to descrape.

I have heard that chewing gum whilst chopping onions is suppose to help.

I use a hand blender that has a bowl and blade attachment. The whole thing is my most used piece of kitchen equipment. I use the blender for soups, smoothies and mashing veg, and with the bowl attachment for chopping onions, making breadcrumbs, chopping nuts - oh all sorts!

You have to have a light touch with the button because the onions can turn mushy if you leave them too long.

Would love the recipe for the relish if you don't mind posting it...

Thanks for all the suggestions. I tried using the grater blade on the food processor but that produced mostly onion juice and big unprocessed chunks. Will try the regular blade and pulsing.
Picked another batch of zucchini last night so I'll try pulsing the onions tonight and let you know how I get on.
Vinca - am at work and the recipe is at home so I'll PM it to you tonight (if I can see through the tears). Will try NeverEnoughTime's chewing gum tip and see if it works.

Gumpenscot,

Couldnt you just pulse them but not too finely, a little bit of texture would improve the taste of your chutney.

I have been a convert for a while to the bought chopped onions, does save so much time and "tears", but only use them for certain dishes, sometimes the real thing, cannot be replaced.

Plasmo - can't buy chopped onions here, which is probably just as well as I might be tempted to buy them too.
Plan to start pulsing tonight- needs to be pretty fine for relish.

Good evening, everyone!
Just wanted to let you know I tried pulsing the onions in the food processor and it worked a treat. I forgot to try the chewing gum tip but having the onions in the FP made things a lot less teary anyway.
Now I'vw got the onion grating thing under control, I'm going to be able to produce commercial quantities of y
zucchini relish. Watch out for 'GumpenScot's Zucchini Relish' in a shop near you!

I got these lovely onions once at the salad bar of a tex-mex type restaurant - they had the consistency almost of breadcrumbs, really fine, and tasted incredibly sweet. Does anyone know how to make them like this? I wondered if I chopped them small and put them on a baking tray in the oven, would this work??

Were they roasted with balsamic vinegar and brown sugar?
